Vegetarian for 90 Days: Day 7

Day 7 baby. Officially a week in! I have to say this is getting easier, I feel like I have more energy, I feel slightly lighter, but at the same time, I never feel full. Is that normal? I mean without the carbs at least, I don’t feel full. I did feel full after my plate of veggie tacos yesterday haha. πŸ˜€ I think that is more of my struggle, trying to stay low carb and not use it as a crutch to feel full since I’m not getting my usual daily chicken (I eat meat but maybe once a week).

I’m usually busy so I don’t get many cravings, but one Β of the downsides of “working” in food, is that, you are surrounded by mouthwatering pictures all day every day. Online, on Instagram, Facebook, Pinterest etc…so I usually don’t crave anything until I’m on one of those platforms. And boy oh boy, am I having a fried chicken craving today!

BREAKFAST

This might be a weird one, but try it, give it a chance. It might be an acquired tasted, but do you add honey to your greek yogurt? I grew up with it, so its delicious to me. I had a bowl of yogurt, topped with a banana, coconut chia granola, almond butter and honey! I have a coconut obsession, and I love to get my chia in for some good morning power.

DINNER

One pan or sheet pan dinners are a fav. For one, the clean up is easy, and secondly, I love to pop something into the oven and it takes care of itself, a huge timesaver! Roasted vegetables are the best. I tend to do cauliflower, carrots & sweet potato. I did it without the potato today. The cauliflower, I just put oil & salt. For the carrots, things get special: turmeric, black pepper, garlic, fresh thyme, ginger & oil. Booyah! It’s so good. Sometimes, I’ll do some cumin instead of the ginger. It’s so easy, try it! I simply roasted everything for 40 minutes at 400F. To be honest, I usually go longer, because I like my cauliflower crispier (and sweeter). I was on a time crunch but it was still delish.

I had roasted beets the day before, so I sliced some up and topped my salad with them and some goat cheese, because do you know me to pass up a cheese opportunity? Mmmm..yeah, I didn’t think so. Also, I’ve mentioned it so many times, but having hummus on hand is a rule, and it went nicely with the veggies.

You might be wondering what happened to lunch? Well, I had a late breakfast, and sorta skipped it. I did get hungry right now, before I typed this baby up and had a beautiful sunny side up egg with some pita bread. I’m not sorry. πŸ™‚ I was too hungry to provide photographic evidence, so that kinda means it didn’t happen, right? I wish calories actually worked that way. πŸ˜€
