No Bake Almond Coconut Date Bites

Snacking doesn’t have to be a disaster. Having these on hand for those sweet tooth moments is a total win. They are very very easy to make, quick, and you can easily modify them with anything you happen to have on hand.

I always have dates in my fridge, they last long, and I make so many variations of this snack all the time. Dates are so underrated, they provide a big energy boost, and are sweet you would almost swear there was sugar in these. I make a chocolate version I will definitely share soon!

No Bake Coconut Almond Oatmeal Bites

Ingredients

  • 1 cup chopped pitted dates
  • 3/4 cup roasted unsalted almonds
  • 1/4 cup quick cook oatmeal
  • 1/3 cup unsweetened shredded coconut

Instructions

  1. In a food processor, add the almonds and pulse a bit to break them up into pea sized pieces. 

  2. Turn it on, then add the dates a couple pieces at a time and keep blending until it is all crumbled.

  3. If it balls up add a 1-2 tsp water, and the ball will break into a paste.

  4. Using a spatula, scrape out the mixture into a bowl.

  5. Add the oatmeal, and most of the coconut. (Keep the rest of the coconut to roll them in at the end)

  6.  Mix well by hand, this will be a little messy πŸ™‚

  7. Wash your hands because hell, I'm sure you need to at this point. Then take small amounts and roll in your palms till it becomes a ball ( a little smaller than a golf ball).

  8. Then roll around in the shredded coconut, that way you get more yummy coconut and they won't be sticky at all on the outside.

  9. Cover, chill and serve! (if they even last that long)
