Chickpeas, those wrinkly dry spheres (I almost typed balls, ha). So, those wrinkly dry spheres, did you ever stop and wonder where they come from? What do they start out as? Well, the picture above is what they look like. They grow on a bush in green pods. You pinch it open to reveal a pea sized green chickpea.
I find them seasonally at a local middle eastern market. I picked them out of their pods, quickly blanched them, and processed them with some lemon, tahini and garlic. I have to admit, they taste completely different than their dry counterpart. They had a green, pea taste, yeah, so descriptive I know. I prefer the dried version.
